Momma’s not bringing my pie down

A pumpkin shortage at Thanksgiving time? Is this some kind of cruel joke from the pernickety mind of Mother Nature? Without doubt, one of the BEST parts of the Turkey Day meal—aside from the family togetherness and the giving of thanks, of course—is letting you fork slip into a smooth, creamy slice of pumpkin pie…topped with reduced fat whipped cream (to reduce the guilt). But this year, our forks may come up completely empty. It seems heavy rains have destroyed some bountiful Midwestern crops, leaving many pie lovers with a pumpkin sized hole in their hearts and appetites.
Maybe Mother Nature is just trying to tell us all something. Maybe she gave us reduced fat whipped cream for a reason…maybe, just maybe, we should pay more attention to what we are putting UNDER that cream. The shortage may be the perfect reason to investigate some healthy pie recipes, like squash pie. (It’s in the pumpkin family, right?). Or maybe just check out some not-so-healthy yet fantastic pumpkin pie alternatives, like apple cranberry current crumble pie. With a little creativity and determination, we can all have our pie and eat it too.
Ms. Nature just better keep her hands off those turkey farms.
